The latest addition to Fitzrovia’s collection of signature amenities is 10 DEAN, a new third-wave café and bar concept. 10 DEAN is now open in Waverley’s Lobby Lounge, bringing the finest quality ingredients and offerings to Waverley residents and to the College and Spadina neighbourhood.
At 10 DEAN, there is a story behind every ingredient used. Premium ingredients are sourced, including milk that is delivered weekly from Sheldon Creek Dairy Farm, located in Loretto, Ontario. Sheldon Creek is known for their attention to detail, dedication to local service, and the attentive care they give daily to their 70 cows. As Sheldon Creek puts it, “what makes our milk unique is we keep it just as the cows have made it! It’s the real deal. The cream rises to the top on our milk because it is non-homogenized and minimally pasteurized at 72 degrees for 16 seconds. This keeps the nutrients intact and makes it easier to digest.”
Meanwhile, 10 DEAN’s exceptional selection of rare and organic teas comes from O5 Tea Bar in Vancouver. O5 emphasizes the origin of their teas and the relationships that they build with farmers across many different regions. In the words of O5, “We want your cup to tell the story of the earth on which the tea grew and the hands that lovingly harvested each leaf.” This tasting experience is now available at 10 DEAN and is hand brewed per order to ensure the perfect cup of tea, every time.
Of course, the coffee at 10 DEAN is not to be missed. At 10 DEAN, every cup of coffee is brewed to perfection, and the barista team has a passion for conversing about the brewing process, the quality of the bean used, and the story behind each cup. 10 DEAN only sources single-origin coffee, selecting some of the most expressive beans in season from around the world. The team at 10 DEAN prides themselves on being a multi-roaster café that rotates their guest roaster every month. Guests have an opportunity to try a wide range of unique and exciting coffees, crafted by some the world best roasters. 10 DEAN is currently featuring Sweven, an incredible roaster based out of Bristol in the UK.
Beyond staple coffee and tea offerings, 10 DEAN has created a signature cookie-butter latte. This warm and flavourful latte is the perfect beverage for a brisk autumn day. Another must-try is the rotating savoury brioche, currently made with smoked salmon and dill cream. There is also a cream-filled brioche option that is currently available as well. Sandwiches are available daily and are made in house with fresh baguettes from Geste Croissanterie.
